Surfing on a Banana Peel

Raw Vegan Stuffed Tomatoes

- a raw vegan delicacy -



1 onion, finely chopped

1 clove of garlic

2 avocados

1 ripe tomato, chopped

Juice from 1 lemon

1 whole tomato

¼ cup raw shredded cabbage





1.Peel the avocados and mash them into paste. Stir in onion, garlic, tomato and cabbage.

2.Slice off top of tomatoes at the stem end and scoop out pulp.

3.Spoon the vegetable mixture into tomato.

4.Serve chilled.
